In my last post, I helped you plan and organize a simple no-stress brunch party, but I talked too much (again!!), and I couldn’t add the recipes. So today, I’m finally sharing those easy recipes! 🙂 I all served them many times, and believe me, not only are they easy to make, but also most of them can be made ahead, which I love!!

You know that I’m all about simple things, so these recipes had to be simple…

… And I mean So Perfectly Simple!! But so good! They will please your guests for sure!

As mentioned in my latest article, hosting a brunch is fun and easy! It’s probably the easiest meal to prepare and definitely the easiest one to serve, especially the buffet option! Easy recipes for a no-stress brunch party: What to serve…

There are so many recipes to choose from when selecting your menu. But the main thing to keep in mind for a no-stress brunch party is the preparation! The more you can make ahead, the better!! You certainly prefer to chat with your guests instead of running from the kitchen to the table every two minutes!

Let’s do a little recap about what things to consider when choosing your menu:

-A nourishing meal contains at least one dish from each food group:

Of course, I won’t share any menu ideas here because I already did it in my last post… but if you missed it, I know, I’m repeating myself! but here is where you’ll find great and simple menu ideas for your next brunch! 

My best advice for a perfect no-stress brunch party is to keep things simple!! I always like to offer a little more but all my dishes are as simplest as possible!

Roasted potatoes, baked beans, fruit plates, cheese plates, yoghurt, pâté, these are all perfectly simple complements to your meal…without having to care about the preparation! 😉

You probably already have one or two favourite recipes, so build your full meal around them. But if you don’t have any, here are some of my favourite ones!!

Easy recipes for a no-stress brunch party: The recipes!!

Finally time to share these no-stress recipes!! I’ve bean talking about them for so long… ha! ha!

I’m proposing a few egg-based casseroles, two wonderful salads for the veggie part, a lovely berry salad, three different ways to serve French toasts, a fabulous chocolate and cinnamon cake…and my favourite cheese sauce that goes with anything.

Ready to discover them?? 🙂

Let’s start with the egg-based dishes because it’s the base of your meal. A brunch without eggs is not really a brunch!

best easy recipes for no-stress brunch partyI just love these! They are so cute and pretty! Of course, you could make them ahead and reheat before serving, but because they are so easy to make, I suggest that you prepare everything but wait the last minute to bake them.

They are also very versatile; you can use any kind of sliced bread, you can use whole eggs or beating eggs, just like for omelettes. You can also add some finely diced veggies, shredded cheese, chorizo dice…or top it with a fabulous cheese sauce. Try them with Hollandaise sauce to turn them into Benedictine eggs (well, kind of!!  ha! ha! ) No matter how you serve them, they will be delightful anyway!!

Ham and eggs cups

Perfect for brunch, easy to make, and so easy to serve!
Servings 6

Ingredients

  • 6 bread slices
  • 6 fully-cooked ham slices
  • 6 small eggs
  • 1 tbsp maple syrup
  • 1 tbsp sliced green onions

Instructions

  • Preheat oven to 350°.
  • Press the bread slices into six muffins tins to form a cup.
  • Brush each cup with maple syrup.
  • Add one slice of cooked ham in each cup.
  • Crack a small egg on top of each cup.
  • Bake for about 30 minutes, or until the yolk is almost done

Notes

You could also beat the eggs with some milk, salt, and pepper and pour them into each cup.
*Serve them with Hollandaise sauce or cheese sauce

A good old classic that I sometimes serve for dinner too! 😊 Again, I chose feta and spinach but feel free to switch for any other veggies or cheeses. I like to serve it directly from the pan but you could also cook it in a square cake mold and cut it into pieces. I top it with a mix of cherry tomatoes, onions and olive oil to add a little extra color…it sure is a super easy dish to make!

Spinach and feta frittata

A good old classic egg-based dish!
Servings 6

Ingredients

  • 8 eggs
  • ½ cup milk
  • ¾ cup diced feta cheese
  • cup fresh spinach, coarsely chopped
  • 1 small onion, finely chopped
  • ½ tsp dried oregano
  • salt and pepper

For cherry tomato topping

  • 20 cherry tomatoes cut into quarters
  • 2 tbsp chopped onions
  • 1 to 2 tbsp olive oil
  • salt and pepper

Instructions

  • Preheat oven to 350°.
  • Grease an ovenproof 7-inch pan.
  • Mix all ingredients and pour into the pan.
  • Cook for 35 to 40 minutes, or until a toothpick comes out clean.
  • *To prepare it ahead: let cool, cover with aluminum, and refrigerate overnight.
    Reheat in the oven for about 20 minutes. Remove the aluminum and continue reheating for 5 to 10 minutes.

For cherry tomato topping

  • Mix all ingredients.
    Pour on top of the hot frittata before serving.

Notes

You could also cook it in an 8-inch square cake mold and cut it into squares before serving.

That is a recipe that I made so many times!

So delightful! This time I used yellow cheddar cheese to add color, but it’s also good with Swiss cheese, Havarti, or any other cheese, totally up to you!! You could also switch ham for pre-cooked bacon or sausages…no matter what option you choose, it will create a wow for sure!!

Ham and cheese casserole

A fabulous simple egg-based casserole that should impress your guests for sure!
Servings 6

Ingredients

  • 16 slices of bread
  • 8 thick fully-cooked ham slices
  • 8 yellow cheddar cheese slices
  • 8 eggs
  • cup milk
  • 1 to 2 tbsp butter
  • salt and pepper
  • 2 tbsp chopped green onions

Instructions

  • Preheat oven to 350°.
  • Grease a rectangular cake mold.
  • Butter each slice of bread.
  • On the buttered side of half of the bread slices, add one piece of ham and one slice of cheese. Cover with the remaining bread slices, buttered side inside.
  • Cut each ham and cheese sandwich into four triangles.
  • Place them in the mold.
  • Beat together eggs, milk, salt and pepper.
  • Pour over the ham and cheese sandwiches.
  • Cook for about 30 to 35 minutes, or until a toothpick comes out clean.
  • Garnish with green onions before serving.

Notes

You could prepare both the ham and cheese sandwiches and the egg mixture ahead and cook it just before serving.

That is a sauce that you will make again and again! You can serve it with almost everything!! With chicken, pasta, quesadillas… you could even add tacos meat or pulled pork to turn it into a fabulous hot dip!!  Possibilities are endless! I just love that kind of recipes! 😉

Ingredients

  • 2 cup shredded white old-cheddar cheese
  • 2 tbsp finely chopped onions
  • 1 tbsp butter
  • 2 cup milk
  • cup all-purpose flour
  • ¼ tsp of each, salt and pepper

Instructions

  • Wisk milk, flour, and salt until the flour is well combined.
  • In a medium saucepan, melt butter. Add onions and cook for 3 minutes, stirring constantly.
  • Add the milk mixture and bring it to a boil over medium-high heat, stirring constantly.
  • Once boiling, let cook for 1 minute until thick, stirring constantly.
  • Remove from heat and add cheese. Stir until cheese is completely melted.
  • Serve hot or cover and refrigerate.

Notes

This sauce will keep up to five days in the fridge, in an airtight container, or up to six months in the freezer

We sometimes think that we don’t need veggies for brunch because some might consider them as breakfest…but having at least one salad will bring colors and freshness to your meal for sure!!

What a great salad here! I just love it! It goes so well with any egg dish. And I always try to make more so I have leftovers…I add cheese, ham or hard boiled eggs and voilà ! A complete meal for my next lunch!! 😉

I also use my favourite secret ingredient in this vinaigrette; it’s called Les herbes salées du bas du fleuve. It’s a fabulous blend of fresh salted herbs. Trust me, it adds a kick to any recipe!! Have a look there where I used these fresh salted herbs to create another wonderful vinaigrette that I serve with a palm hearts salad…so yummy!!! You definitely have to try them!!

Asparagus and cherry tomato salad

That salad goes so well with any egg dish. Try to make more, so you have leftovers...add cheese, ham, or hard-boiled eggs, and voila! A complete meal for your next lunch!!

Ingredients

  • 1 bunch of asparagus
  • 1 small box of cherry tomatoes (250 gr)
  • 1 onion divided in two and finely sliced

For the vinaigrette

  • ¼ cup olive oil
  • 1 tbsp white vinegar
  • 1 tbsp Balsamic vinegar
  • 1 tbsp Dijon mustard
  • 1 tsp dried fine herbs
  • ¼ tsp salted herbs
  • ½ tsp minced garlic
  • black pepper

Instructions

  • Cut asparagus into 1½ inch pieces.
  • Cut cherry tomatoes into halves.
  • Gently mix tomatoes, asparagus, and onions into a serving bowl or plate.

For the vinaigrette

  • Whisk well all ingredients, pour onto the salad, gently toss. Cover and refrigerate until serving time.

Notes

Fresh salted herbs are very salty. If you're not too crazy about salt, I suggest you try a smaller quantity first...

That salad is absolutely delightful!! So colorful! It will sure brings sunshine to your table! Sweet and savory, I can say without a doubt that this is the perfect salad for your next brunch!! I’m pretty sure that it would also be very good for your lunch the next day, but I never tried it… I never had any leftovers! ha! ha!

Mango and tomato salad

That salad is so delightful!! So colorful! It will sure bring sunshine to your table! This is the perfect salad for your next brunch!!
Servings 6

Ingredients

  • 2 sliced mangos
  • 3 tomatoes cut into thin quarters
  • 4 green onions cut into slices

For the vinaigrette

  • cup olive oil
  • 2 tbsp white wine vinegar
  • 2 tbsp cilantro
  • 1 tbsp honey
  • salt and pepper

Instructions

  • Arrange mango and tomatoes on a serving plate. Sprinkle green onions on top.
  • Mix well all vinaigrette ingredients. Pour onto the salad. Cover and refrigerate until serving time.

Easy recipes for a no-stress brunch party: French toast, three ways…

We all love French toasts! Just like many of us, they are probably the first recipe you ever made!

Although is perfectly fine to serve the good old classic ones, it’s also fun to add a little something different to it. So here, I serve them with a wonderful cherry sauce, I turn them into a croissants bread pudding, and finally, I transform them into muffins! Sounds good isn’t it?

Just love that cherry sauce so much! I could eat it with anything! Not only do I serve it with french toast and pancakes, but I also like to serve it with pannacotta, cake or cheese cake, yoghurt, brownies, and even with just plain vanilla ice cream! So easy to make and it will keep up to one week in the fridge. Once you try it, you just can’t stop making it! Try the blueberry version, almost as delightful as the cherry one!! 🙂

The perfect cherry sauce

A perfect cherry sauce to serve with pancakes, French toast or many other dessert! Also great on yoghurt, or vanilla ice cream.
Servings 6

Ingredients

  • 2 cup frozen cherry, frozen
  • cup sugar
  • 2 tbsp corn starch
  • 1 cup water
  • 2 tbsp butter
  • 1 tsp lemon juice
  • 1 tbsp Amaretto liquor

Instructions

  • In a medium saucepan, combine frozen cherries, sugar, and corn starch.
  • Cook over medium heat, stirring occasionally, until the mixture thickens and comes to a full boil. Let boil for one more minute.
  • Remove from heat, add butter and lemon juice. Mix well. Let cool for 10 minutes.
  • Mix in the Amaretto. Cover and refrigerate.

Notes

This sauce will keep up to one week in the fridge.
* Also great with blueberries! Simply skip the Amaretto and add a bit more lemon juice and some lemon zest.

That is such a great casserole to add the sweet touch to any brunch. I like to serve it with raisins and maple syrup, but you could also serve it with fresh berries or add apple dice…and maple syrup!! ha! ha! I’m a French Canadian girl, so I add maple syrup to almost everything!!

  • 6 French croissant cut into slices
  • 8 eggs
  • ¾ cup milk
  • cup maple syrup
  • 1 tsp vanilla
  • ¼ cup raisins

Instructions

  • Preheat oven to 350°
  • Grease a loaf pan.
  • Whisk eggs, milk, maple syrup, and vanilla.
  • Add croissant slices, mix well until well coated. Set aside for 5 minutes.
  • Add raisins and pour the mixture into the loaf pan.
  • Bake for about 30 minutes or until a toothpick come out clean.
  • Serve hot, warm, or at room temperature with maple syrup or fresh fruits.

Notes

You can serve it directly from the pan or unmold and serve on a serving plate.

  • ½ cup milk
  • ½ cup brown sugar
  • 1 tsp vanilla

Instructions

  • Preheat oven to 350°.
  • Line 6 muffins tins with parchment paper.
  • Whisk all ingredients except bread cubes.
  • Add bread cubes and stir gently. Let sit for 5 to 10 minutes.
  • Pour into muffins tins.
  • Bake for 35 to 40 minutes or until a toothpick comes out clean.
  • Let cool on a wire rack. Drizzle some maple syrup on top before serving.
    Serve warm or at room temperature.

Add it to cereals or yogurt, or use it to top a plain vanilla cake. This time I added sliced almonds, but it’s also great with shredded coconut, toasted or not. 😊

Ingredients

  • 8 oz fresh raspberries
  • 8 oz fresh blueberries
  • 1 lb fresh strawberries, sliced
  • 2 tbsp sliced almonds
  • ¼ cup water
  • 2 tbsp brown sugar
  • ½ tsp lemon juice
  • ½ tsp vanilla

Instructions

  • Using a small saucepan, heat water and brown sugar for a few minutes, until sugar is completely diluted. Add lemon juice and vanilla and let cool.
  • Combine blueberries and strawberries in a serving bowl. Pour cooled syrup and gently mix.
  • Add raspberries and gently mix.
  • Sprinkle almond slices on top, cover, and refrigerate until serving time.

Notes

In addition to giving a bit more taste to your fruit, the syrup will make them shinier, which is perfect for when you prepare it the day before!

Chocolate and cinnamon go so well together!… and you could also add some chocolate sauce to add a little decadent touch! 😉 I like to use a chimney mold for this recipe, so it’s easier to cut into slices, but a bread mold will give a great result too.

  • ¾ cup softened butter
  • cup sugar
  • 3 eggs
  • 1 cup all-purpose flour
  • ½ cup cocoa powder
  • 1 tsp cinnamon
  • 1 pinch baking powder
  • 1 pinch baking soda
  • 1 pinch salt
  • ½ cup buttermilk
  • 2 tbsp water

Instructions

  • Preheat oven to 350°.
  • Butter and grease a chimney mold or a 9-inch loaf pan.
  • Using an electric mixer, beat the butter and sugar. Add eggs one at a time while mixing.
  • In another bowl, combine flour with cocoa powder, cinnamon, baking powder, baking soda and salt.
  • Add dry ingredients, buttermilk, and water to the egg mixture alternately, and stir until the mixture is smooth.
  • Pour batter into the cake mold and bake in the center of the oven for about 45 minutes, or until a toothpick comes out clean.
  • Let cool on a wire rack for 10 minutes.
  • Turn out on a plate. Serve warm or cold

Notes

*This cake can be frozen. Let cool completely, wrap in aluminum foil, and place in an airtight container or a Ziploc-type freezer bag.

easy cinnamon swirls Lastly, my Easy cinnamon swirls!

These are the best! Long time ago, I was inspired by a good old classic recipe to make these swirls with pie dough leftovers… but since then, I have made them without even baking a pie!! I like to make a good quantity and freeze them; so I always have something sweet on hand. I sometimes add chopped nuts or raisins, depending on how I feel…I will share the basic version, but feel free to add whatever you like!! 😉 And the best thing about this recipe… is there is no recipe! ha! ha! You can make any quantity you want, as long as you have pie dough, brown sugar, and cinnamon!

…but still, here are the approximative quantities I use…

Easy cinnamon swirls

These are the best! You could also add chopped nuts or raisins to add different flavors and texture.
Servings 24

Ingredients

  • 1 lb ready-made pie dough
  • cup brown sugar
  • ¾ tsp cinnamon

Instructions

  • Preheat the oven to 350°.
  • Line a large baking sheet with parchment paper.
  • Roll the dough into a large rectangle about 1/4 inch thick.
  • Evenly spread brown sugar.
  • Sprinkle cinnamon on top.
  • Starting with the longest side, roll up to form a long cylinder, tightening well.
  • Cut into ¼-inch slices.
  • Place on the baking sheet and bake for 15 to 20 minutes, or until golden brown.
  • Cool on a wire rack...and enjoy !!

Notes

The good thing about this recipe is that there is no recipe! Quantities don't really matter here. You can add a bit more or a bit less brown sugar, and the same with cinnamon.
You could also add raisins or chopped nuts.
