We all love cheesecake, and there are so many ways to serve it. It’s worth talking about it so much.

For this third part of my post series, I will share an easy and simple recipe I always use as a base for almost all cheesecakes I bake. And right after, I will share my friends and family’s ten favorite toppings.  All simple and delicious toppings!

In case you missed them, the first post of this series was about how to turn 1 pie into 10 fabulous pies, and we create 10 different vanilla cakes from one same base in the second one. 😉

So, ready? Let’s talk about cheesecakes!

From 1 cheesecake to…10 cheesecakes!…The base

I made different cheesecakes over the years, but this is the one I prefer. I baked it many times, and it was always a success!…

Especially since I discovered these easy tricks to avoid cheesecake from cracking!  From now on, you’ll see that your cheesecakes will look like magazine covers! 😉

Ingredients:

  • 3 packages of cream cheese, softened
  • 1 cup of sugar
  • 1 tbsp of vanilla
  • 4 eggs

For the crust:

  • 1-1/2 cup of graham crumbs
  • 1/4 cup of melted butter
  • 1/4 cup of sugar

Instructions:

  1. Preheat the oven to 350F
  2. Line a 9-inch springform pan with parchment paper.
  3. In a bowl, mix all crust ingredients. Press into the springform pan to form a crust.
  4. Bake for 10 minutes.
  5. Whisk cream cheese with sugar, vanilla, and eggs until smooth and creamy.
  6. Pour into the cake mold and even the surface.
  7. Bake for 60 to 70 minutes, or until the center of the cake is almost firm.
  8. Turn off the oven and leave the cake in the oven for 1 hour, with the door half-open.
  9. Remove from the oven and let cool.
  10. Put the cake in the fridge for 3 to 4 hours or until completely cooled.

**Cherry Sauce Cheesecake**

A good old classic here! My famous cherry sauce.

I really like this versatile sauce; I serve it with many things, from ice cream to pancakes!

Ingredients:

  • 2 cups of frozen cherries, frozen
  • 1/3 cup of sugar
  • 2 tbsp of cornstarch
  • 1 cup of water
  • 1 tsp of lemon juice
  • 1 tbsp of Amaretto liquor ( optional )

Instructions:

  1. In a medium saucepan, combine frozen cherries, sugar, and corn starch.
  2. Cook over medium heat, occasionally stirring, until the mixture thickens and comes to a full boil. Let boil for one more minute.
  3. Remove from heat, and add butter and lemon juice. Mix well. Let cool for 10 minutes.
  4. Mix in Amaretto. Cover and refrigerate.
  5. Once cooled, pour over the cake and refrigerate until serving time.

**Peach & Blueberry Cheesecake**

I like the mix of blueberries and peaches. Not only does it taste good, but the colors also blend very well. Peaches add a little sunshine to this dessert!

Ingredients:

  • 1/3 cup of sugar
  • 2 tbsp of cornstarch
  • 1 cup of water
  • 2 tbsp of butter
  • 2 tbsp of lemon juice
  • 1 tsp of grated lemon zest
  • 2 cups of frozen blueberries, frozen
  • 3 peaches, cut into thin quarters

Instructions:

  1. In a saucepan, combine the sugar and the cornstarch. Add water. Cook over medium-high heat, occasionally stirring, for 3 to 5 minutes or until thickness and full boil. Let boil for 1 minute.
  2. Remove from heat and add butter, lemon juice, and lemon zest. Let cool for 10 minutes.
  3. Add the blueberries.
  4. Once cooled, put the cheesecake back into the springform pan. Pour the blueberry sauce over and refrigerate for a few hours.
  5. Just before serving, cover with peach slices.

**Strawberry & Raspberry Cheesecake**

from 1 cheesecake to 10 cheesecakes

This is the version I probably made the more often. So delightful 😊

Ingredients:

  • 1-1/2 cup of strawberries, diced
  • 1-1/2 cup of raspberries
  • 3/4 cup of sugar
  • 2 tbsp of raspberry jelly powder
  • Some more fresh strawberries and raspberries for garnishing

Instructions:

  1. In a saucepan, heat strawberries and sugar until almost boiling.
  2. Add the jelly powder and bring it to a boil, stirring constantly.
  3. Add the raspberries, gently stirring.
  4. Remove from heat and let cool completely.
  5. Set the cheesecake onto a serving plate and pour the berry sauce over it.
  6. Garnish with fresh strawberries and raspberries.
  7. Refrigerate until serving time.

**Maple & Nuts Cheesecake**

Of course, I had to share one with maple syrup, my magic ingredient that I add almost everywhere! ha! ha! Don’t believe me? 😉 Well, you should see the fantastic vinaigrette I make with maple syrup! So yummy!!

This Maple & Nuts cheesecake is by far the easiest recipe! But, oh, so, so good!

Ingredients:

  • 1/2 cup of maple syrup
  • 4 tbsp of graham crumbs
  • 1/2 cup of chopped walnuts or pecans

Instructions:

  1. In a small bowl, combine maple syrup and graham crumbs.
  2. Cover and refrigerate for at least 2 hours.
  3. Just before serving time, set the cake onto a serving plate.
  4. Pour over the maple syrup mixture.
  5. Garnish with chopped walnuts.

**Chocolate Ganache & Peanuts Cheesecake**

Another classic! And feel free to switch peanuts for any nuts you have on hand.

You can either pour the ganache over the cake or slice your cake into single parts and then add chocolate sauce and nuts. Both ways are great… and so easy to make!

Ingredients:

  • 3/4 cup of whipping cream
  • 1-1/4 cup of dark or milk chocolate chips
  • 1/2 cup of chopped peanuts, or nuts

Instructions:

  1. In a saucepan, bring the cream to a boil.
  2. Remove from heat.
  3. Add chocolate.
  4. Whisk for a few minutes until the chocolate melts and is smooth.
  5. Let cool completely.
  6. Pour over the cheesecake and sprinkle peanuts.

**Raspberries & White Chocolate Cheesecake**  

What a great combination here! 😉 Garnish it with chopped pistachios to turn it into the perfect Christmas Cheesecake!

Ingredients:

  • 1/2 of heavy whipping cream
  • 1 cup of good quality white chocolate

Instructions:

  1. Pour heavy cream into a saucepan over medium heat; heat until just boiling.
  2. Remove from heat; add white chocolate chips. Whisk gently until white chocolate chips are melted and blended into the cream.
  3. Let cool until slightly thickened, about 15 minutes. Cover and refrigerate.
  4. Evenly spread raspberries over the cake.
  5. Drizzle white ganache over and garnish with chopped pistachios or almonds.
  6. Refrigerate until serving time.

**Caramel Sauce & Pears Cheesecake**

I’m a pear lover! I like pears… Especially with my caramel sauce! ha! ha! So, just imagine how I like when it’s over a cheesecake!

This caramel sauce is my go-to sauce. I serve it with so many things. It really is the perfect sauce to quickly transform any dessert into a masterpiece!

Ingredients:

  • 1 cup of brown sugar
  • 1-1/2 tbsp of white flour
  • 1 tbsp of butter
  • 1 tsp of vanilla
  • 4 pears cut into thin quarters.
  • 1 tbsp of butter
  • 1/4 cup of brown sugar
  • 1/2 to 3/4 tsp of cinnamon

Instructions:

  1. In a saucepan, mix brown sugar and flour. Add milk, vanilla, and butter.
  2. Bring to a boil, stirring constantly. Let boil for 2 minutes until thickened. 
  3. Remove from heat and let cool.
  4. Meanwhile, in a saucepan, melt butter over medium heat.
  5. Add pear quarters, brown sugar, and cinnamon. Cook for 5 to 7 minutes, until pears are cooked but firm.
  6. Remove from heat and let cool completely.
  7. Set the cake onto a serving plate.
  8. Garnish with pears and pour the caramel sauce over.
  9. Refrigerate until serving time.

**Orange & Almonds Cheesecake**

I like to add a bit of Grand Marnier to this wonderful cake to enhance flavors, but if you’re not a fan, just skip it, 😉 no one will know.

Ingredients:

  • 2/3 cup of orange marmalade at room temperature
  • 1 tbsp of Grand Marnier or Cointreau ( or any other orange liquor )
  • 4 oranges, peeled raw, and sliced
  • 1/3 cup of almond slices
  • 1 cup of sweetened whipped cream

 

Instructions:

  1. Mix well marmelade and Grand Marnier.
  2. Evenly spread over the cake.
  3. Garnish with orange slices.
  4. Add some whipped cream rosettes.
  5. Sprinkle almond slices. Refrigerate until serving time.

For lemon lovers 😊 so creamy and tasteful!

You could also use that lemon cream in a graham pie shell and garnish it with whipped cream to get a fabulous lemon pie in no time!

Ingredients:

  • 1/3 cup of sugar
  • 1/3 cup of lemon juice
  • 2 tsp of lemon zest
  • 2 large eggs at room temperature
  • 1/2 cup of softened butter at room temperature
  • 1 cup of sweetened whipped cream
  • Lemon zest to garnish

Instructions:

  1. In a small saucepan, combine sugar, lemon juice, lemon zest, and eggs.
  2. Add the butter and cook over low heat, constantly whisking, until starting to boil and thick enough, about 6-8 minutes.
  3. Transfer to a bowl and cover the surface with plastic wrap.
  4. Refrigerate until cold.
  5. Evenly spread over the cheesecake.
  6. Garnish with whipped cream, and sprinkle lemon zest.

**Strawberry & Kiwis Cheesecake**

Another great match! The perfect summer cake, so beautiful 🙂

Ingredients:

  • 2/3 cup of sugar
  • 3 tbsp of cornstarch
  • 2 cups of fresh strawberries, in chunks
  • 10 to 12 strawberries cut into quarters
  • 3 kiwis cut into thick slices or quarters

Instructions:

  1. In a saucepan, combine sugar, strawberries, and cornstarch.
  2. Cook over medium heat until thickened, about 10 to 15 minutes, stirring occasionally
  3. Let cool.
  4. Pour over the cheesecake.
  5. Garnish with strawberries and kiwi slices.
  6. Refrigerate until serving time.

See how easy it is to transform a plain cheesecake into masterpieces?!

The key is to use an easy recipe as a starter and build on it! Add whatever toppings and garnishings you like; let your inspiration guide you. 🙂

Many of the recipes I shared can be used in many different ways.

Of course, springform pans are the easiest, but you could easily use any other cake pan shape. Lined them with parchment paper to make unmolding easier. You would have lovely square or rectangle pieces to serve.
