The best chocolate cake!… Why…

Let me explain why I need your help…

I often receive recipes from my readers ( which I love! ), and it seems that chocolate cake is your favorite because I received many fabulous chocolate cake recipes. And on the other hand, I often get questions about cake, and people ask me my favorite chocolate cake recipe.

So, of course, it gave me a great idea! ha! ha!

Why not make a whole post about chocolate cake? Brilliant, isn’t it? ha! ha!

You know how much I love desserts, and to tell you the truth, chocolate cake is one of my favorites too!

…But I want that post to be all about you!

That’s why I’m asking for YOUR best chocolate cake recipe!

It could be any cake you like, as long as it’s chocolate! Dark chocolate, milk chocolate, white chocolate…or a mix of them.

It could also be cupcakes, cheesecake, no-bake cake… I don’t mind at all! The only condition is that it has to be easy and simple.

You know by now that I’m all about simple things, and easy & simple recipes are the ones I prefer.

ha! ha! But you know what? The best thing about it is that I will have to bake tons of cakes to taste and find out which are the best ones… I might gain a few pounds, but believe me, it is totally worth it!

The best chocolate cake!… My recipes

I’m asking you for your best recipe, so I have to share mine too!

I can’t tell you how many times I have made chocolate cakes… And there are so many that I like, it wasn’t easy to choose, but I selected the two ( really? ) recipes I prefer.

Of course, I like them because they’re good,  but also because they are simple… and easy! But most of all, because they are chocolate cakes! ha! ha!

So, while I’m waiting for your favorite recipes, here are mine.

Number one is my favorite chocolate cheesecake. So delicious and so, so easy to make! And the second one is my famous upside-down chocolate & pecan cake! It is such a pretty and delicious cake!

Let’s start with The Best Chocolate Cheesecake.

That really is the easiest chocolate cheesecake!

The best no-bake chocolate cheesecake

Ingredients

For the cake base

  • cup Oreo crumbs
  • cup chopped, roasted almonds
  • ¼ cup melted butter
  • 2 tbsp sugar

For the filling

  • 2 packages softened cream cheese
  • 1 cup sugar
  • 6 oz semi-sweet chocolate
  • ¼ cup cold water
  • 1 pouch unflavored gelatine
  • 1 cup whipping cream, whipped
  • melted chocolate and chopped almond for garnishing

Instructions

For the cake base

  • Grease an 8-inch springform cake pan.
  • Combine Oreo crumbs, melted butter, chopped almonds, and sugar.
  • Press into the cake mold to form a crust.

For the cake filling

  • Beat cream cheese on low speed with a mixer until smooth.
  • Add sugar and melted chocolate and mix well.
  • Sprinkle gelatin over cold water in a saucepan and let swell for 5 minutes. Heat over low heat, stirring until gelatin is completely dissolved.
  • Stir the melted gelatin into the cheese and chocolate mixture.
  • Gently fold the cheese and chocolate mixture into the whipped cream.
  • Pour into the mold cake and refrigerate for at least 4 hours or overnight.
  • Garnish with melted chocolate and chopped almonds.

 

And now, my famous upside-down chocolate and pecan cake.

upside-down pecan & chocolate cakeFor this cake, you can use absolutely any kind of cake mold! You could use a loaf pan to have it look more like bread, a square cake pan, or even a round one. But most of the time, I use a chimney mold. I love the look of a lovely ring cake.

Ingredients

For the pecan garnishing

  • ¼ cup butter
  • ½ cup brown sugar
  • 1 cup pecan, in halves
  • ½ cup shredded coconut

For the cake

  • cup white flour
  • 1 cup sugar
  • ½ tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • cup softened butter
  • ¾ cup buttermilk
  • 1 tsp vanilla
  • 4 oz melted sweet chocolate, cooled
  • 2 eggs

Instructions

For the pecan garnishing

  • Preheat oven to 350°
  • Grease and line a 9-inch chimney mold with parchment paper.
  • Put the butter in the pan and melt in the oven.
  • Add brown sugar and spread evenly. Lay the pecan halves decoratively on the sugar. Sprinkle with coconut. Set aside.

For the cake:

  • Combine flour, baking soda, baking powder, and salt in a bowl.
  • In a second bowl, cream the butter.
  • Stir in flour mixture, 1/2 cup buttermilk, and vanilla; beat well with an electric mixer for 2 minutes on medium speed.
  • Add chocolate, eggs, and remaining buttermilk and beat for one minute.
  • Pour into the pan over the pecan mixture and gently spread evenly.
  • Bake for 45 to 55 minutes; or until a toothpick comes out clean.
  • Immediately turn out onto a plate and remove the parchment paper.
  • Serve hot or cold with whipped cream or vanilla ice cream.

As you know by now, I love desserts! I love them so much that I made a book of my favorite ones! 😊( and yes! there are a few chocolate cake recipes in it! )

That cake is so, so easy to make, and look how spectacular it is! Feel free to top it with tons of roasted almond slices… or serve it plain with ice cream or fruits; it’s really up to you!

Easy three chocolate cake

Ingredients

For the cake:

  • 1 pack chocolate instant pudding
  • 1 box chocolate cake mix
  • 1 cup plain Greek yogurt
  • ½ cup vegetable oil
  • ½ cup water
  • ½ cup chopped roasted almonds
  • 4 eggs
  • 2 tbsp almond liquor ( optional )
  • 1 tsp vanilla
  • 1 cup semi-sweet chocolate chips

For the icing:

  • 4 oz semi-sweet chocolate
  • 2 tbsp butter
  • 2 tbsp almond liquor
  • ½ to 1 tsp vegetable oil

Instructions

For the cake:

  • Preheat oven to 350°
  • Grease and flour a chimney cake mold.
  • Combine all the cake ingredients, except the chocolate chips, and beat on medium speed for 4 minutes.
  • Add the chocolate chip and mix well.
  • Pour into the cake mold and bake for 50 to 60 minutes, or until a toothpick comes out clean.
  • Let cool for 15 minutes before demoulding.

For the icing:

  • Melt chocolate and butter in a double boiler. Add the almond liqueur and oil and mix until smooth.
  • Pour over the cake and garnish with roasted almond slices.
